Created by Ted Henwood, he has an interesting story to share behind its creation. “The inspiration was my Friend Christiaan Rollich who created the Beautiful Day Foundation after his wife’s passing from Breast Cancer. We bartended together in Los Angeles at Lucques; he was a brother, a friend, and gifted bartender. A Japanese client ordered green tea and Johnny Walker Red on the rocks one night from Chris — we both cringed but were curious. We made our own at the end of the night and it was goooood. So it inspired me to honor our brotherhood and his efforts to find cure, and create this eponymous cocktail for his charity.”
This is a subtle, perfectly balanced cocktail, and perfect for use with Japanese food. With the garnish, one is reminded of springtime.
Finding rhubarb at this time of year wasn’t easy, but I managed to track some down. The syrup when finished is a lovely pink hue that will work fantastically in silver rum and tequila cocktails. Really elegant.

The Beautiful Day
1.25oz Irish whiskey
0.75oz rhubarb syrup
2oz cold brewed green tea
Garnish: Edible flowers
Shake with ice and strain into ice-filled old-fashioned glass. Garnish with edible flowers.



Not only is this a fantastic story (my condolences) but the heart you must’ve put into this drink is stunning. And it shows. This drink is fantastic. It looks fantastic.
