Shake all with ice, and strain into a cocktail glass. Garnish with an Empire apple slice.

Creator’s Notes: Believe it or not, I was inspired by the classic Hot Toddy, which is a winter-time necessity in our household. Now that Absinthe is once again available in the U.S., I was eager to pair a sweet heathery Scotch with the dark herbal notes of an absinthe. I think this cocktail is greater than the sum of its parts. I used an Empire apple as the garnish. You don’t want anything too sweet or too tart here. The garnish can be eaten in between sips.
