Another early cocktail from the prohibition days, undoubtedly inspired by the “Bee’s Knees” cocktail. This is actually pretty tasty, and a good argument for using honey syrups in cocktails. You get a lot more flavor than just using sugar. Serving this in a champagne flute also gives it an air of elegance. If you wanted to go the extra mile, you could garnish this with a piece of honeycomb (the real thing, not the breakfast cereal).
1.5oz light rum
1oz heavy cream
0.75oz honey syrup
Shake and strain into a chilled champagne flute.
