Located in the heart of Carbondale, Colorado’s Creative District, Marble Distilling Co. & The Distillery Inn is a family & friends owned craft spirits distillery, tasting room and luxury inn. The only distiller in the world to use the world-famous marble stone as a filtering agent, MDC currently offers four spirits – Marble Vodka, Moonlight EXpresso, Gingercello & Gingercello Reserve which aged in ex-Bourbon barrels.

Marble Distilling Co. is a pioneer of sustainable distilling and is one of the only (if not the only) zero-waste distillery in the world.  Their motto “Drink Sustainably” is the core of the business. MDC recaptures 100% of its process water & reuses energy harvested from the distillation process to heat its facility, saving more than 4 million gallons of water annually & capturing for reuse, enough energy to heat 20 homes.  All grains are sourced locally & all stillage from MDC’s distillery is sent to local Carbondale ranchers. 

As if that weren’t enough, The Distillery Inn is the first and only inn in the world to be housed within an operational distillery – guests can “Sleep with the Stills”. The Distillery Inn offers luxury accommodation, with five sophisticated, contemporary rooms.

The distillery recently received a Master’s Medal in Green Initiatives, the highest award allotted, from The Global Spirits Masters series. Produced by UK-based The Spirits Business which has long celebrated the international spirits industry, they created the Global Distillery Masters to celebrate the achievements and innovations of the distilleries themselves, beyond their spirits. “This is an example of what you should be doing” said Judge David T. Smith, Founder of the Craft Distilling Expo. Smith went on the say “they (Marble Distilling Co.) have the additional challenge of having a hotel as well. I think it’s great that they are zero-waste.” Judge Nicholas Clark Director General of The Gin Guild remarked that “The figures for water savings are astonishing.”

Marble Vodka (80 proof)
Visual: Clear.
Nose: You can definitely smell the grain here, with a peppery and solid kick. Some fresh mint and a ton of clean minerality. More character than expected.
Taste: Quite smooth, round and with a hint of sweetness to offset the rich mouthfeel of the distillate. This is a vodka with body and a solid character.
Finish: Long and satisfying, with a dry finish that leaves a clean palate.
Overall: This is the kind of vodka that can stand on its own in a shot, a martini or as the base spirit in a more complex cocktail. Very much recommended.
GSN Rating: A

Gingercello (70 proof)
Visual: Slightly cloudy.
Nose: Lemon citrus with a ginger top note. Fresh, lively and friendly.
Taste: Somewhat viscous mouthfeel with a not too intense sweetness. The lemon predominates and mixes well with the sugar, but the more subtle ginger adds a warming richness and deep spice that lifts this above and beyond a typical limoncello.
Finish: Medium long with the ginger having staying power.  The lemon fades more quickly, but there are no off notes.
Overall: A lovely new product that is ingenious.  This could easily become the best new product taking its place alongside popular brands of ginger or elderflower liqueurs for use in bespoke 21st century cocktails.

Gingercello Reserve (70 proof)
Visual: Pale gold.
Nose: Everything that the standard Gingercello has, but with a curious herbal penumbra. I pick up a sage nose, with the lemon and ginger faintly cheering in the distance.
Taste: Interestingly, the ginger heat is more present in this iteration.  Along with that is an almost buttery sweetness (like caramel corn) which is deliciously unlike anything I’ve ever had before.
Finish: Long ginger spice with a toothsome bourbon finish.
Overall: It’s hard to outdo the flagship Gingercello, but this is an entirely new liqueur in a direction that is sheer brilliance. This has been getting fantastic reviews from everyone in the GSN offices.  Whoever came with the idea of aging in used bourbon casks deserves a special place in distiller’s heaven.  If you can manage to get a bottle of this seasonal limited edition, do so now.  You won’t regret it.

Moonlight EXpresso (52 proof)
Visual: Cloudy brown.
Nose: Strong coffee nose with a molasses and charcoal patina.
Taste: Very much an espresso character with a well portioned dollop of sugar to keep things on the sweet side.  The fact that there is alcohol in here just adds to the experience.
Finish: Long lasting espresso roast notes carried out with a southerner’s level of sweetness.
Overall: A sweet ending to a meal, or a boost to your weekend morning coffee.  A bit sweeter than I’d like, but well-flavored.
